After Kartika’s mother passed away, Kartika felt compelled to recreate the cakes they baked together back home in Indonesia. She takes pride in sharing the subtle flavor and texture of her mother’s spice cake recipe with others.

Dutch baking techniques and aromatic Indonesian spices are used to create the delicate texture and flavors. Commonly served on holidays in Indonesia or as a dessert after the Dutch-Indonesian feast rijsttafel, this treat is a delicious complement to tea, coffee or a glass of wine.


How Flourless Thousand Layer Cake Is Made


Local and natural eggs, butter, sugar, milk, salt and fragrant spices are combined into a rich batter, which is then spread in a thin layer and baked to a golden brown. Next, another layer of batter is added, and the pan is inserted back into the oven. The process is repeated until multiple layers are formed. While labor-intensive, the multi-step baking method results in a moist and decadently striped sweet.
